Rubicon Red cheese

Rubicon Red is a Red Leicester style of cheese. The name Rubicon Red was adopted by the Bennett families of Ashgrove in honour of the Rubicon River that flows through Elizabeth Town and forms part of the boundary for several of the Ashgrove Cheese properties.

Red Leicester cheese is famous for the bright colour adopted by cheese makers several hundred years ago to assist their cheese to stand out in the market.The bright orange colour of Rubicon Red is achieved through the use of annatto, a natural plant colouring derived from the seeds of the annatto tree. The annatto adds colour but not flavour to the cheese.

Ashgrove Rubicon Red is produced using full cream milk. It has a slightly higher moisture content than Cheddar which enables it to be classified as a semi hard cheese. It is matured for 6 months prior to sale. It is a firm textured cheese that is easy to slice and cut.

The boldness of the colour makes Rubicon Red an attractive addition to any cheese board or platter. It is also an excellent melting cheese to add colour to pasta dishes and pizza's.
