Tassie Trio Traditional cheese

Tassie Trio is a unique 3 in 1 cheese created by Ashgrove made up from Rubicon Red, Creamy Lancashire and Double Gloucester. The three cheeses selected for this Trio represent a superb range of colour and flavour.

Rubicon Red is a Red Leicester style of cheese. The name Rubicon Red was adopted by the Bennett families of Ashgrove in honour of the Rubicon River that flows through Elizabeth Town and forms part of the boundary for several of the Ashgrove Farms properties.

Red Leicester cheese is famous for the bright colour adopted by cheese makers several hundred years ago to assist their cheese to stand out in the market. The bright orange colour of Rubicon Red is achieved through the use of annatto, a natural plant colouring derived from the seeds of the annatto tree. The annatto adds colour but not flavour to the cheese.

Creamy Lancashire has a mild flavour owing to a short maturing time. The term “creamy” refers to the soft texture the young cheese has and the smooth flavour. Despite the young age the high level of lactic acid developed in the curd ensures there is a good flavour to the cheese.

Double Gloucester is a buttery yellow coloured cheese. It is made using full cream milk with the addition of small amounts of annatto colouring to enhance the rich colour of the cheese. The annatto is the same product that is added to the Rubicon Red however the concentration is much lower in the Double Gloucester to produce the rich buttery colour.

The variety of colour and texture found in the Tassie Trio makes it an ideal choice for dinner party cheese boards or nibbles. This cheese provides a flavour to suit many palates.

Tassie Trio is also an excellent cheese to melt over dishes as it provides a unique colour addition.
