As the name implies the Wensleydale cheese evolved in the Wensleydale
region of the Yorkshire Dales. The Ashgrove Cheese dairy herd produces milk of a slightly higher fat content than is traditionally used for cheese production. The Ashgrove Wensleydale is produced using full cream milk giving it a slightly creamier texture. Ashgrove Wensleydale is a relatively moist cheese that is consumed young.
It has a high level of lactic acid which provides a good acid flavour
to the cheese. It is an excellent cheese to consume with fruit. Wensleydale
has been traditionally complimented by fruit cake.
