Did you know the only difference between Organic and In-conversion Cheese is time?
The In-conversion process is known as converting to organic, and the first level of certification where a label can be used is called. “In Conversion to Organic”.
‘Conversion’ refers to the physical and biological processes the farmer and the farming system must undergo to comply with organic standards.
‘Certification’ refers to a formal process which assesses and then accredits the farming system for compliance with organic standards.
It makes sense to us to support our farmers who are already growing organically and allow them to sell In-Conversion products in the marketplace.
Farming organically can significantly increase their costs because they can only use organic inputs (such as certified organic animal feed) or manually weed – so why not support their efforts?
