It is Truffle time in Tasmania, and we thought we would share with you this fabulous and delicious recipe from Ben Milbourne, who lives just down the road from the Ashgrove Milk and Cheese factory.
Ingredients
3 slices thick-cut bread or sourdough
20g Ashgrove Farmhouse Butter or Herb and Garlic Butter
100g ham
1⁄4 cup Ashgrove Wasabi Chedder
1⁄4 cup grated Ashgrove Cloth Matured Cheddar
1 tablespoon Hillfarm Dijon mustard
Fresh Black Truffle (as much as you like, or can get your hands on) or your home made Ashgrove truffle butter.
Steps
Step 1: Place one piece of bread in the toaster and toast it until it is just golden, this will be your middle piece so it needs to be slightly pre-cooked.
Step 2: Butter one side of the two remaining pieces of bread with the butter.
Step 3: Place one piece of the bread buttered side down in a frying pan over a low heat, smear it with the Dijon Mustard sprinkle the wasabi cheddar on top the add the ham.
Step 4: Place the pre cooked piece of bread on top of the ham the add the mature cheddar and the freshly grated truffle, then place the final piece of bread on top and smear with a little more butter.
Step 5: Place the pan on a medium heat and cook for a couple of minutes each side or until the outside is golden and toasted and the cheese is gooey and melted.
Tip
If you cannot find fresh black truffles is to replace the fresh truffle with a homemade truffle butter.
All you need is:
1 block of 250g Ashgrove Traditional Farm House Butter
1Tbls of truffle oil, which you can find at all good food deli’s
Soften the butter and beat in truffle oil – its that easy !
