Ashgrove Cheese was honoured to showcase our Gold medal winning Signature Cloth Matured Rubicon Farm Red Leicester at the launch of Mumm Tasmania Brut Prestige - a new sparkling wine sourced in Tasmania and made in collaboration with Australian sparkling specialist Trina Smith and G.H. Mumm Chef de Cave Laurent Fresnet.
Aged for 36 months, our Signature Cloth Matured Rubicon Farm Red Leicester is a deep ruby red, and its pleasantly earthy tones and burnt caramel complexity, was shaved from the wheel and served on a Charcoal cracker with Quince Jelly. This combination was the perfect match for the complex aromas of warm spices, red berries and delicate acidity of Mumm Tasmania Brut Prestige.
