Easy Three-Ingredient Lemon Posset

Ingredients
- 600mL Ashgrove Pure Cream
- 150g caster sugar
- 2 lemons, finely zested and juiced — approximately 60mL juice
Method
1. Heat the cream and sugar
Pour the Ashgrove Pure Cream and caster sugar into a saucepan over medium heat.
Stir until the sugar has completely dissolved, then bring the mixture to a gentle boil. Reduce the heat slightly and simmer for 3 minutes, stirring occasionally.
2. Add the lemon
Remove the saucepan from the heat and stir through the finely grated lemon zest and fresh lemon juice.
The mixture will begin to thicken naturally as the lemon reacts with the cream.
3. Pour and chill
Divide the lemon posset mixture between six small glasses, dessert dishes or ramekins.
Allow to cool slightly before placing in the refrigerator for at least 4 hours, or preferably overnight, until completely chilled and set.
4. Serve
Serve your lemon posset chilled with a little extra lemon zest.
For something special, add fresh Tasmanian berries, a crisp biscuit or a scattering of toasted pistachios just before serving.
