Smoked Havarti, Caramelised Onion & Fig Paste Toastie

Ingredients
2 slices bread
45g Ashgrove Lake Burbury Smoked Havarti, thinly sliced
½ onion, thinly sliced
2 tbsp Ashgrove Tasmanian Fig Paste
3 tbsp Traditional Farmhouse Butter, softened
Method
1. In a small frying pan, add 1 tbsp butter and sliced onions. Cook, stirring occasionally, on med-low heat until softened and lightly browned, approx. 20-25 minutes. Set aside.
2. Spread a generous layer of the remaining butter on one side of each of slices of bread. Spread fig paste on the the other side of each slice.
3. Spread caramelised onions onto one slice of bread (fig paste side up), followed by slices of Smoked Havarti. Top with remaining slice of bread to create a sandwich with buttered sides on the outside.
4. Place the sandwich (buttered side down) in frypan on a medium-low heat. Cook for 2-4 minutes, flipping half way to ensure both sides of sandwich are browned evenly. Once the bread has browned and the cheese has melted, remove from pan, slice in half and serve.
