Leftover Christmas Ham, Havarti & Spinach Salad

150g baby spinach, washed
250g sliced Christmas ham
200g Ashgrove Havarti, cut into thin wedges
1 orange, segmented
1 bunch chives, cut into 5cm lengths
¼ cup extra virgin olive oil
¼ cup orange juice
1 tbsp cranberry sauce
1 tsp Dijon mustard
1. To make the dressing, mix together ingredients, until well combined. Season.
2. Lay spinach on a large serving platter. Top with ham, havarti, orange segments and chives. Drizzle over dressing and serve with extra dressing on the side.
